Unsaved Watermelon Salad with Mint and Ricotta Salata

Ingredients

  • 2 tbsp Mesquite honey
  • 1/2 tsp Orange pepper seasoning, plus more as needed to taste
  • 1 cup Ricotta salata, shaved thinly
  • 1/4 cup Fresh mint, chopped
  • 1/4 cup Limes, juiced
  • 2 Nectarines, diced or sliced thinly
  • 1 Watermelon, diced into 1-inch cubes

Instructions

  1. In a large bowl, combine watermelon, nectarines, mint. Toss gently to combine.
  2. In a small bowl, combine lime juice, honey and orange pepper seasoning, whisk and pour over watermelon salad.
  3. Refrigerate until ready to serve, garnish each salad with shaved ricotta salata.
