1 hr 25 min
15 min prep
1 hr 10 min cook

Serves 4

Ingredients

  • 1 Calabaza squash, like acorn or kabocha squash, cut in half, all seeds scraped out
  • 1/2 tsp Ground cumin
  • 1/4 tsp Allspice
  • 1/2 tsp Kosher salt, plus more as needed
  • 1/2 tsp Ground black pepper, plus more as needed
  • 2 oz Unsalted Butter, 1/2 stick, melted
  • 3 tbsp Sweetened condensed milk, or as needed for sweetness

Instructions

  1. Preheat oven to 350ºF. Line a sheet pan with foil or parchment paper.
  2. On prepared pan, place squash cut-side down and spray with a little oil to keep it from sticking, if needed.
  3. Bake 45 to 65 minutes or until squash is nicely roasted and skin is very tender when pricked with a toothpick.
  4. Meanwhile, combine ground cumin, all spice, salt and pepper. Set aside.
  5. Once roasted, remove squash from oven and cool slightly. While still warm, scoop out squash, roughly chop and add to a serving bowl.
  6. Add a little spice mix, butter and condensed milk to squash and mix well. Season to taste as needed with more spice mixture and salt and pepper.
