Warm Spice Roasted Calabaza with Sweet Milk

Serves 4
Ingredients
- 1 Calabaza squash, like acorn or kabocha squash, cut in half, all seeds scraped out
- 1/2 tsp Ground cumin
- 1/4 tsp Allspice
- 1/2 tsp Kosher salt, plus more as needed
- 1/2 tsp Ground black pepper, plus more as needed
- 2 oz Unsalted Butter, 1/2 stick, melted
- 3 tbsp Sweetened condensed milk, or as needed for sweetness
Instructions
- Preheat oven to 350ºF. Line a sheet pan with foil or parchment paper.
- On prepared pan, place squash cut-side down and spray with a little oil to keep it from sticking, if needed.
- Bake 45 to 65 minutes or until squash is nicely roasted and skin is very tender when pricked with a toothpick.
- Meanwhile, combine ground cumin, all spice, salt and pepper. Set aside.
- Once roasted, remove squash from oven and cool slightly. While still warm, scoop out squash, roughly chop and add to a serving bowl.
- Add a little spice mix, butter and condensed milk to squash and mix well. Season to taste as needed with more spice mixture and salt and pepper.
