Warm Cauliflower & Corn Salad with Basil

Serves 6

Ingredients

  • 1/2 tsp Ground black pepper, plus more as needed
  • 1 cup Feta cheese
  • 1 Large Fresh cauliflower, chopped small
  • 4 Sweet corn on the cob, corn cut off the cob
  • 1 Fresh basil, chopped
  • 1/4 cup Scallion mustard
  • 1/2 tsp Kosher salt, plus more as needed to taste
  • 2 tbsp Extra virgin olive oil

Instructions

  1. Preheat oven to 400ºF.
  2. Place cauliflower and corn in a bowl and toss together with olive oil and salt and pepper.
  3. Place seasoned veggie mixture onto a sheet pan and roast 30 to 40 minutes or until veggies have some color. Allow to cool slightly.
  4. Place cauliflower mixture into a serving dish and add feta cheese, basil and mustard.
  5. Toss to combine and season as needed to taste.
