Vietnamese Style Grilled Pork Tomahawk

Ingredients

  • 1 cup Fish sauce
  • 1 oz The Spice Hunter Coriander Lime Rub
  • 1 1/2 cups Cane sugar
  • 2 1/2 fl oz Fresh lime juice
  • 3 Thai Bird Chiles, minced
  • 2 lb Duroc Pork Rack

Instructions

  1. Place fish sauce, spice rub, and sugar in a large mixing bowl. Set over a water bath and whisk vigorously for one minute to warm and dissolve the sugar.
  2. Add lime juice and minced chiles and mix well. Place pork chops in marinade and coat well. Rest for 1 hour then grill to desired doneness.
