Vesuvio Pasta with Spicy Sausage and Swiss Chard

Unsaved Vesuvio Pasta with Spicy Sausage and Swiss Chard

Ingredients

  • 1 lb Central Market Vesuvio Pasta di Gragnano
  • 1/2 cup Reserved pasta water
  • 1 lb Ground mild Italian sausage
  • 1/2 cup Red onions, diced
  • 2 tbsp Garlic cloves, minced
  • 1 Swiss chard, chopped
  • 1 tbsp Lemons, zested
  • 1/3 cup Fresh basil, chiffonade

Instructions

  1. Place a large pot of water on high heat and cook pasta according to package instructions. Drain, reserving 1/2 cup pasta water for sauce.
  2. Meanwhile, cook sausage in a large sauté pan until almost fully cooked. Add in onion and garlic, and sauté until translucent.
  3. Add Swiss chard and stir-fry 3-4 minutes until just wilted. Stir in reserved pasta water and pasta, and toss. Cook an additional 3-4 minutes until water is almost all evaporated.
  4. Turn off heat. Add lemon zest and fresh basil, toss, and serve immediately.
