Veggie Stir Fry

Serves 6

Ingredients

  • 1 tsp Olive oil
  • 1/2 cup White onion, chopped
  • 1 Carrot, sliced
  • 1 lb Brussel sprouts, halved
  • 2 cups Broccoli crowns, cut into bite-size pieces
  • 1 pt Baby bella whole mushrooms, sliced
  • 1 tbsp Cornstarch
  • 1/2 cup Chicken broth
  • 1 tbsp Less sodium soy sauce
  • 1 tbsp Chipotle peppers in adobo sauce, minced

Instructions

  1. Heat skillet to medium-high and add oil.
  2. When oil is shimmering, add onions and cook until tender.
  3. Add carrots and brussel sprouts, stirring frequently. Cook 2 minutes.
  4. Add broccoli and mushrooms, and cook an additional 2 minutes stirring occasionally.
  5. While veggies cook, whisk cornstarch and broth together until combined; blend in soy sauce and chipotle.
  6. Add sauce mixture to veggies, and cook 1-2 minutes or until sauce thickens.
  7. Remove from heat and serve.
