Vegetarian Italian Wraps

Serves 6
Ingredients
- 1 Extra Virgin Olive Oil Spray, 6 second spray
- 12 Wheat flour tortillas
- 3 tbsp Roasted garlic hummus
- 3 tbsp Olive tapenade
- 1 cup Sweet tomatoes, thin sliced
- 6 tbsp Tomato and basil crumbled feta
- 1 cup Baby Spinach, thin sliced
- 1 cup Mushrooms, thin sliced
Instructions
- Heat oven to 400°F.
- Line baking sheet with foil, spray with no-stick spray.
- Wrap tortillas in paper towel, microwave on high power for 1 minute, keep warm.
- Spread each tortilla with 1/2 tablespoon each roasted garlic hummus and olive tapenade.
- Arrange 4 thin tomato slices, 1 tablespoon crumbled Feta cheese, 1 tablespoon sliced baby spinach and 4 slices mushrooms down the center of each softened tortilla.
- Spray each filled tortilla with no-stick olive oil spray and roll like a taco, secure with a toothpick, and place on prepared baking sheet.
- Bake wraps on center oven rack for 15 minutes or until tortillas are crispy brown.
- Cut each wrap in half and serve.
