Vegetable Noodle Soup

Serves 6
Ingredients
- 2 tbsp Extra virgin olive oil
- 1 cup Celery, sliced
- 1 cup Fresh carrots, sliced
- 1 tbsp Fresh garlic clove, chopped
- 1 Small white onion, diced
- 1 cup Sweet tomatoes
- 1 Bay leaf
- 4 cups Low sodium chicken broth
- 1/3 cup Stars pasta (estrellas)
- 1 cup Baby spinach, chopped
- 1/2 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 1 Fresh lemons, juiced
Instructions
- In a large, heavy bottom pot, heat 2 tablespoons olive oil.
- Add celery, carrot, garlic and onion and cook until translucent.
- Add cherry tomatoes and bay leaf. Cook, stirring occasionally until the tomatoes begin to blister.
- Once tomatoes begin to blister, stir in chicken broth, stars pasta, spinach, salt, pepper and lemon juice. Bring to a low simmer and cook until the pasta stars are cooked through.
- Chef's note: Serve with a bit of Parmesan cheese and crackers.
