Ingredients
- 2 Zucchini squash, cut in 1 inch pieces
- 2 Yellow squash, cut in 1 inch pieces
- 3/4 lb Purple eggplant, cut in 1 inch cubes
- 2 Sweet onion(s), cut in eighths
- 1 Green pepper(s), halved, seeded, cut into 1/2 cubes
- 1 Red bell pepper, halved, seeded, cut into 1/2 cubes
Instructions
- Wash vegetables in cold water and dice according to ingredient directions.
- Alternate vegetable pieces on long metal skewers.
- Place on rack of broiler pan or on grill.
- Broil slowly at 350°F or grill 8-10 minutes per side, until vegetables are tender and lightly browned.
