Vegetable Medley

Ingredients

  • 2 Zucchini squash, cut in 1 inch pieces
  • 2 Yellow squash, cut in 1 inch pieces
  • 3/4 lb Purple eggplant, cut in 1 inch cubes
  • 2 Sweet onion(s), cut in eighths
  • 1 Green pepper(s), halved, seeded, cut into 1/2 cubes
  • 1 Red bell pepper, halved, seeded, cut into 1/2 cubes

Instructions

  1. Wash vegetables in cold water and dice according to ingredient directions.
  2. Alternate vegetable pieces on long metal skewers.
  3. Place on rack of broiler pan or on grill.
  4. Broil slowly at 350°F or grill 8-10 minutes per side, until vegetables are tender and lightly browned.
