Vegan Macadamia Ricotta

Ingredients
- 2 cups Macadamia nuts
- 2 tbsp Lemon, Juiced
- 2 tbsp Nutritional yeast
Instructions
- Place macadamia nuts in a medium-size bowl. Add water to completely submerge the nuts by at least 2 inches.
- Cover with plastic wrap and refrigerate for at least 3 hours or as much as 5 hours.
- Once nuts have soaked, drain water, reserving 3/4 of a cup of soaking liquid. Discard remaining liquid.
- In a food processor, add nuts, soaking liquid, lemon juice, and nutritional yeast.
- Pulse until smooth and creamy with a consistency of ricotta cheese. Season to taste with salt as desired.
- Cover and store in the refrigerator for up to 5 days. Use macadamia ricotta as a vegan substitute for real ricotta cheese.
- Chef's Note: To use this ricotta for cannoli, simply substitute a pinch of salt and nutritional yeast in place of stated amount and add enough sugar as needed to sweeten.
