Vegan Chocolate Mousse

Ingredients

  • 3/4 cup Cashew milk
  • 1 cup Enjoy Life semi-sweet chocolate chips
  • 12 oz Silken tofu
  • 2 tbsp Medium Amber Maple Syrup
  • 1 tsp Vanilla extract

Instructions

  1. Place cashew milk and chocolate chips in a microwave-safe bowl and heat about 1 minute (depending on microwave). Stir until chocolate chips are dissolved. If necessary, heat a bit longer. Let mixture cool for a few minutes.
  2. Add chocolate mixture, tofu, maple syrup, and vanilla to a food processor or blender and process until puréed. If not chocolaty enough, add more chocolate chips. Do not add more milk because the mousse won't set properly.
  3. Pour into 4 - 5 ramekins or small dishes. Chill 2 - 3 hours and it's ready to eat!
