Vegan Cauliflower Queso

Ingredients

  • 10 oz Cauliflower florets
  • 1 tbsp Extra virgin olive oil
  • 1 tsp Garlic powder
  • 1 tbsp Liquid aminos
  • 1 Jalapeño pepper
  • 15.5 oz Can of white beans, undrained
  • 1/4 cup Nutritional yeast
  • 1 cup Unsweetened almond milk, use less for a thicker consistency
  • 1 tsp Turmeric
  • 12 oz Pico de gallo

Instructions

  1. Preheat oven to 425ºF. Place a 9 x 13-inch baking dish in oven to heat as well.
  2. Season cauliflower and with olive oil and garlic powder. Place in heated baking dish and bake 20 minutes or until cauliflower is tender.
  3. Meanwhile, add white beans with their liquid to a blender along with turmeric, nutritional yeast, Bragg's and almond milk. Blend until very smooth.
  4. Add cooked cauliflower and jalapeno then blend on high until smooth.
  5. Pour into a bowl and stir in pico de gallo. Serve.
