Unwrapped Egg Roll Bowl

Serves 4
Ingredients
- 2 tbsp Canola oil
- 2 tbsp Garlic clove, minced
- 2 tbsp Fresh ginger root, minced
- 4 oz Mushrooms, diced
- 1 lb Plant based ground beef
- 1 cup Julienned carrots
- 4 cups Green cabbage, finely shredded, divided use
- 1/2 cup Green onions, sliced
- 1 tbsp Rice vinegar
- 1/4 cup Coconut aminos
Instructions
- Heat oil skillet in large skillet over medium-high heat. Add in garlic, ginger, and mushrooms and cook for 3 to 4 minutes then add in carrots and half of the cabbage. Continue to cook until cabbage has wilted.
- Add in the beyond beef, green onion, vinegar, and coconut aminos then let simmer for 2 minutes. Then cover and remove from heat.
- To build bowl, place a small amount of raw shredded cabbage on the bottom of a bowl, and top with egg roll mixture. Garnish with cilantro, bean sprouts or sesame seeds.
