Unwrapped Chicken Enchiladas with Cilantro Cream Sauce

Ingredients

  • 12.5 oz Creamy cilantro sauce, plus jar filled with water and shaken to get all of sauce
  • 8 oz Neufchatel cream cheese, softened
  • 6 Corn and flour blend tortillas, cut into 8 wedges
  • 2 cups Shredded rotisserie chicken
  • 2 cups Shredded Mexican blend cheese
  • 1 cup Frozen super sweet corn
  • 2 cups Baby spinach, chopped

Instructions

  1. Preheat oven to 400ºF.
  2. In a medium saucepan, gently heat cilantro sauce, water and cream cheese until sauce is smooth and cheese is melted.
  3. Lightly grease a 9” x 13” casserole pan then spoon a little of the sauce into the bottom.
  4. Layer tortilla slices, cilantro sauce, cooked chicken, shredded cheese, corn, and spinach in several layers, ending with shredded cheese.
  5. Cover with foil and bake 20 to 25 minutes until lightly browned on top and warmed throughout.
  6. Remove foil and bake another 5 minutes.
  7. Allow to rest for 5 minutes before serving.
