Ultimate Tortilla Soup

Ingredients
- 2 cups Chicken broth
- 1 cup Fresh cilantro, chopped
- 32 oz Tortilla soup
- 1 cup Haas avocado(s), sliced
- 26 oz Fully cooked chicken breast fajitas
- 8 oz Neufchatel cream cheese, cubed
- 12 oz Mild pico de gallo
- 1 cup Tortilla chips, crushed
Instructions
- Pour soup, broth and pico de gallo into a 6-quart pot. Bring mixture to a boil over medium-high heat. Add cream cheese.
- Reduce heat to medium. Stir soup frequently while cheese is melting. Reduce heat, if necessary, to keep soup at a low simmer.
- Roughly chop chicken fajitas into bite-sized pieces and add to soup. Add cilantro and simmer for 10 minutes just to heat chicken through.
- Serve soup garnished with avocado cubes and tortilla chips.
