Twice Baked Microwave Potatoes

Serves 4

Ingredients

  • 4 Medium baking potato
  • 1 Large egg
  • 1/4 cup Reduced Fat 2% Milk
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 2 tbsp Green onion(s), chopped
  • 3/4 cup 2% mild cheddar, shredded

Instructions

  1. Scrub potatoes under running water with a vegetable brush.
  2. Pierce potatoes a few times with a knife or fork.
  3. Microwave potatoes on high 9-12 minutes, turning and rotating every 3 minutes until potatoes feel soft when squeezed.
  4. Beat egg, milk, salt, pepper and chives until blended.
  5. Remove top one-fourth of potato with a knife.
  6. Scoop potato from center with a spoon leaving a thin wall at least 1/4-inch thick.
  7. Mash or beat potato with milk mixture until smooth.
  8. Fold in cheese until evenly distributed.
  9. Fill potato shells with mashed potatoes.
  10. Microwave stuffed potatoes on high 5 minutes.
