Tuscan Pot Roast

Serves 8

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1 1/2 lb Chuck roast
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 1 cup Carrot, sliced
  • 4 oz White mushrooms, sliced
  • 1 cup White onion, chopped
  • 1 tbsp Italian Seasoning
  • 1 cup Low sodium beef broth
  • 1 Pasta sauce

Instructions

  1. Heat a large skillet or Dutch oven over medium-high heat.
  2. Add in oil and swirl to coat pan.
  3. Season chuck roast with salt and pepper and sear on all sides (approximately 4 to 5 minutes per side). You may need to adjust the flame as not to burn the roast.
  4. Sauté carrot, mushrooms and onion together until veggies begin to brown (approximately 4 to 5 minutes).
  5. Return roast to the pan and add in beef stock and sauce. Bring to a gentle simmer.
  6. Place entire Dutch oven or oven safe skillet in the oven at 300°F.
  7. Let cook until meat is fork-tender.
