Tuscan Kale Soup

Ingredients
- 2 tbsp Olive oil
- 1 1/4 lb Sweet turkey Italian sausage, casing removed
- 7 oz Diced onion and celery
- 3 Garlic cloves
- 2 tbsp Sundried tomato paste
- 2 qt Low sodium chicken broth
- 1/4 cup Heavy cream
- 1 bunch Kale, about 3 Cups, chopped
- 1/4 cup Shredded Parmigiano Reggiano
- 1/2 tsp Crushed red pepper flakes
- 1 tbsp Kosher salt
Instructions
- Heat a large stock pot over medium-high heat. Add olive oil and turkey sausage, and cook until sausage is browned, breaking it up as it cooks. Remove from pot and set aside.
- Add celery, onion and garlic to the pot. Saute until onions and celery are translucent- about 5-7 minutes. Add sundried tomato paste and stir to combine. Cook for an additional 2 minutes. Add the sausage back to the pot along with chicken broth.
- Stir in sundried tomato paste and cook for an additional 2 minutes. Return Italian sausage to pot, add chicken broth and heavy cream, and stir to combine.
- Stir in kale, Parmesan, red pepper flakes, and salt. Bring to a simmer, and continue to simmer for 5 to 7 minutes.
