Turmeric Cabbage

Ingredients
- 2 tbsp Extra virgin olive oil
- 1/2 Medium yellow onion, peeled and medium diced
- 1/2 cup Green onion, green tops only sliced into 1/2 inch pieces
- 2 Medium fresh garlic clove, minced
- 1 cup Carrots, matchstick
- 1 Medium head of green cabbage, core removed and large diced
- 4 oz English peas, blanched and chilled
- 2 tsp Kosher salt
- 2 tsp Ground black pepper
- 2 tsp Turmeric powder
- 1 tsp Garam masala
Instructions
- Heat a large heavy bottom pot over medium heat and add oil. When hot add onion, garlic, and carrots and cook, stirring frequently, for 1 to 2 minutes.
- Add in cabbage and peas and cook for 3 to 4 minutes, stirring occasionally. Add in salt, pepper, turmeric, and garam masala and stir to combine. Add in 1/2 cup water and cover. Reduce heat to low and cook for 10 minutes.
- Check occasionally and stir to prevent browning. When cabbage is fork tender it is ready to serve.
