Turkey Taco Skillet

Serves 6
Ingredients
- 1 cup Reduced Fat Mexican Style Cheese, Shredded, shredded
- 2 tbsp Salt Free Taco Seasoning
- 1 cup Green Chili Stew
- 1 tbsp Extra virgin olive oil
- 1 cup Baked unsalted tortilla chips, crushed
- 1/4 cup Green onions, chopped
- 1 cup Yellow onions, diced
- 5 oz Baby spinach, chopped
- 1 lb Lean ground turkey
Instructions
- Place oil in a large skillet over medium-high heat.
- Add in turkey and cook for several minutes, breaking into crumbles, until lightly browned.
- Then add in onion and cook for an additional 3 minutes.
- Add in chile stew mix and taco seasoning and mix well.
- Stir in spinach, reduce heat and simmer uncovered for several minutes.
- Add in cheese, tortilla chips, and green onion over top. Cover with a lid until cheese is melted.
- Serve in large bowls over chopped romaine or enjoy on its own.
