Turkey Spinach Roll-Ups

Ingredients

  • 1 cup Fat free shredded cheddar cheese
  • 1/2 cup Light sour cream
  • 4 oz Mesquite smoked turkey breast
  • 2 cups Baby spinach
  • 1 Red bell pepper, cored, seeded and cut in strips

Instructions

  1. Combine shredded cheese and sour cream in a small bowl.
  2. Place turkey slices on cutting surface.
  3. Spread 1/3 cup shredded cheese mixture on each slice.
  4. Arrange 1/2 cup baby spinach leaves and 4 pepper strips over cheese mixture.
  5. Roll each turkey slice like a taco and wrap in plastic wrap.
  6. Refrigerate for 30 minutes or until ready to serve.
