Turkey Lettuce Wraps

Serves 4

Ingredients

  • 1 tbsp Avocado oil
  • 1 lb Ground turkey
  • 1/2 cup Red bell pepper, finely diced
  • 1 oz Pkg. Power Slaw
  • 1/2 cup Green onions, finely diced
  • 1/2 cup Fresh cilantro, leaves only, finely chopped
  • 1/4 cup Ginger Scallion Sauce, (or substitute an Asian peanut sauce)
  • 1 Medium head of butter or roamine lettuce, separated into leaves and washed for serving

Instructions

  1. Preheat a large skillet over medium-high heat. Add oil and ground turkey to pan, stirring and breaking apart any large chunks of meat while cooking.
  2. Cook until turkey is lightly browned and fully cooked. Reduce heat to medium and add bell pepper, Power Slaw, onion, and cilantro. Stir to combine and wilt vegetables just a little.
  3. Turn heat off. Pour sauce over mixture and stir just long enough to heat through.
  4. Gently spoon turkey mixture into lettuce leaves and serve.
