Unsaved Turkey Hash

Ingredients

  • 2 tbsp Extra Virgin Olive Oil
  • 2 Sweet potatoes, cubed
  • 1 Yellow onion, sliced
  • 2 Serrano pepper(s), seeded & sliced
  • 1 cup Shredded cooked turkey, white and dark meat
  • 1/4 tsp Kosher salt
  • 1/2 tsp Ground Black Pepper
  • 1 tbsp Salted Butter
  • 4 Large eggs

Instructions

  1. Heat olive oil in a large non-stick pan on medium-high.
  2. Sauté sweet potatoes for 10 minutes.
  3. Add onions and cook an additional 5 minutes or until onions become tender.
  4. Toss in serrano peppers, shredded turkey, salt and pepper. Cook until heated through.
  5. Spoon onto four plates.
  6. Using the same pan, reduce heat, add butter and gently fry eggs to desired doneness. Serve on top of hash.
