Turkey Braciole with Roasted Tomato Sauce

Unsaved Turkey Braciole with Roasted Tomato Sauce

Ingredients

  • 1 Thin sliced turkey breasts
  • 1 1/2 cups Peeled garlic cloves
  • 1 1/2 cups Extra virgin olive oil
  • 2 lb Sweet tomatoes
  • 1 Fresh basil, bunch
  • 1 tsp Crushed red pepper
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper

Instructions

  1. Preheat oven to 350°F.
  2. On a cutting board pound out turkey breasts thin enough to roll them up. Set aside.
  3. In a small sauce pot add 1 cup garlic, and olive oil. Bring to just a bare simmer with a few bubbles breaking the surface of the oil. Cook over low heat until garlic is very soft and slightly brown, about 45 minutes. Cooking at too high a heat will burn the garlic. (Low and slow is the way to cook garlic properly.). Remove garlic from heat, and reserve ½ cup of garlic infused oil for cooking tomatoes.
  4. In an oven safe dish add tomatoes, ½ cup fresh garlic and reserved ½ cup of garlic infused olive oil, add salt and pepper and toss together to coat. Roast in a 350ºF oven until tomatoes and garlic are nicely roasted, for about 30 - 45 minutes.
  5. Place roasted tomato and garlic mixture into a blender add fresh basil, and red pepper flakes. Purée until sauce is smooth and season to taste with more salt and pepper.
  6. Spread a couple of tablespoons of softened roasted garlic cloves over each of flattened turkey cutlets. Roll each cutlet up and place side by side in an oven safe dish. Cover cutlets with sauce, cover dish with foil and bake for 20 - 30 minutes or until the internal temperature of turkey is 165ºF.
