Quick & easy:Turkey Bolognese with Spaghetti Squash

Serves 4
Ingredients
- 1 Medium spaghetti squash, halved lengthwise and seeds removed
- 1 tbsp Cooking oil
- 1 lb Ground turkey
- 12 oz Roasted garlic pasta sauce
- 1/2 cup Low sodium chicken broth
Instructions
- Place squash cut-side down in a microwave-safe casserole dish. Add water to a quarter-inch up the sides. Cover tightly with plastic wrap and poke several holes for venting. Microwave 12 to 15 minutes or until a sharp knife easily pierces squash. Remove from dish and shred with 2 forks. Set aside.
- While squash cooks, heat oil in a large saucepan over medium-high heat. Add turkey and cook until no pink remains. Season to taste with salt and pepper.
- Stir in pasta sauce and chicken broth. Bring to a simmer and cook for 5 minutes. To serve, spoon sauce over squash and top with Parmesan cheese if desired.
