Turkey Bánh Mì

Serves 4
Ingredients
- 1/3 cup Mayonnaise
- 1 Lime, juiced
- 2 tbsp Hot chili sauce
- 1 Cucumber, sliced thin
- 1 cup Matchstix carrots
- 4 tbsp Rice wine vinegar
- 1 Baguette bread
- 2 cups Roasted turkey, shredded
- 2 tbsp Hoisin sauce
- 2 Jalapeño pepper(s)
- 1 cup Fresh cilantro, loosely packed, chopped
Instructions
- Combine mayonnaise, lime juice and Sriracha sauce in a small bowl. Set aside.
- In a separate bowl, combine cucumber and carrots with the vinegar. Marinate at least 10 minutes.
- Using a serrated knife cut the baguette in half lengthwise but do not cut completely through. Gently toast under broiler a few minutes. Bread should be crisp but not too hard.
- Spread mayo mixture on both cut sides of baguette.
- Place turkey and hoisin sauce in a microwave safe bowl and heat 3 to 4 minutes.
- Layer turkey, jalapeños, cilantro, and drained pickled cucumbers and carrots on baguette.
- Cut into 4 equal pieces and serve.
