Turkey Bacon Salad with Avocado

Serves 4

Ingredients

  • 3 cups Leftover turkey, dark and white meat, shredded
  • 1/2 cup Mayonnaise
  • 1 tsp Whole grain mustard
  • 5 slices Original bacon, cooked, chopped
  • 1/2 Red onion, finely diced
  • 4 Sourdough rolls, sliced in half and toasted
  • 4 Red leafy lettuce leaves
  • 1 Large salad tomato(es), sliced thick
  • 1 Large avocado, gently smashed

Instructions

  1. In a medium sized bowl, combine first 5 ingredients, mix well.
  2. On bottom half of bun, place lettuce then a large scoop of turkey bacon salad.
  3. Top with a large slice of tomato and avocado.
  4. Place top half of bun over avocado. Enjoy!
