Turkey and Chickpea Soup with Cumin and Lemon

Serves 8

Ingredients

  • 1/4 cup Extra virgin olive oil
  • 1 1/2 tbsp Tomato paste
  • 1 tbsp Cumin seed
  • 1 tbsp Peeled garlic cloves, minced or zested
  • 1/2 cup Fresh shallots, diced small
  • 2 Dried bay leaves
  • 1/2 tbsp Dried oregano
  • 2 cups Smoked turkey breast, or leftover turkey scraps; shredded, chopped or diced small
  • 31 oz Low sodium garbanzo beans, (2) 15.5 ounce cans, do not drain liquid
  • 1 qt Chicken broth
  • 1/4 cup Fresh lemon juice
  • 1 cup Fresh Italian parsley, roughly chopped
  • 1/3 cup Fresh dill, minced or chopped fine
  • 1/3 cup Fresh mint, chopped fine

Instructions

  1. Place a medium pot or Dutch oven over medium heat.
  2. Add olive oil, tomato paste, cumin seeds, garlic, shallots, bay leaves and oregano.
  3. Stir-fry until tomato paste and garlic start to caramelize and become fragrant, approximately 8 to 10 minutes.
  4. Add turkey, canned beans with liquid, chicken broth, and lemon juice. Bring to a simmer then lower heat to a bare simmer.
  5. Add fresh herbs and cook for 45 minutes to 1 hour or until liquid has reduced and thickened slightly.
  6. Serve with toasted bread and garnish with a dollop of Greek yogurt and minced chives if desired.
  7. Chef's Note: The base flavor in this dish comes from the caramelization of tomato paste with garlic and shallots. Let them get really caramelized, it makes all the difference to the finished soup.
