Truffle Arrabiatta Sauce

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 2 tbsp White Truffle Oil
  • 2 tbsp Peeled garlic cloves, minced or zested
  • 1/2 cup Fresh white onion(s), sliced
  • 1 tsp Fennel seeds
  • 1 tsp Crushed red pepper, plus more as needed for spice level
  • 28 oz Tomatoes
  • 1 tsp Truffle zest

Instructions

  1. Place a medium sized Dutch oven over medium heat. Add olive oil and truffle oil and allow to get hot.
  2. Add garlic and onions and cook until soft and starting to turn a light tan. Sprinkle in fennel seeds and red pepper flakes and continue to stir-fry for 3 to 5 minutes more.
  3. Stir in tomatoes, truffle zest and a generous pinch of salt and pepper. Turn down heat and allow to simmer for at least 30 to 45 minutes.
  4. Serve over pasta and garnish with fresh parsley and pecorino if desired.
