Truffle Arrabiatta Sauce

Serves 6
Ingredients
- 1 tbsp Extra virgin olive oil
- 2 tbsp White Truffle Oil
- 2 tbsp Peeled garlic cloves, minced or zested
- 1/2 cup Fresh white onion(s), sliced
- 1 tsp Fennel seeds
- 1 tsp Crushed red pepper, plus more as needed for spice level
- 28 oz Tomatoes
- 1 tsp Truffle zest
Instructions
- Place a medium sized Dutch oven over medium heat. Add olive oil and truffle oil and allow to get hot.
- Add garlic and onions and cook until soft and starting to turn a light tan. Sprinkle in fennel seeds and red pepper flakes and continue to stir-fry for 3 to 5 minutes more.
- Stir in tomatoes, truffle zest and a generous pinch of salt and pepper. Turn down heat and allow to simmer for at least 30 to 45 minutes.
- Serve over pasta and garnish with fresh parsley and pecorino if desired.
