Traditional Spanish Rice

Serves 6

Ingredients

  • 1 Large Carrot, peeled and diced small
  • 2 1/3 cups Chicken broth
  • 1 1/2 cups Long grain white rice
  • 2 tbsp Vegetable oil
  • 1/3 cup Picante sauce
  • 1/2 cup White onions, sliced
  • 1 Large Garlic cloves, minced fine

Instructions

  1. In a medium sized non stick saucepan set over medium heat, add oil, rice, onions, garlic and carrots.
  2. Stir fry until rice is opaque in color and onions are nicely sweated. Stir frequently to keep rice from toasting too much.
  3. Add chicken broth, picante sauce. Bring to a simmer, cover pot and reduce heat to low.
  4. Cook until all liquid is absorbed approximately 20 to 25 minutes. Fluff with fork, season to taste.
