  • 4 Ears of fresh sweet corn, husk and silk removed
  • 1/4 cup Mayonnaise
  • 1/4 cup Crema
  • 1/4 cup Grated Cotija cheese, as needed
  • 1 tsp Chili powder, as needed
  • 1 Garlic clove, minced

Instructions

  1. Bring a large pot of water to a boil then gently add ears of corn. Reduce heat to low and simmer until corn is very tender, 20 to 25 minutes.
  2. Meanwhile, in a medium bowl mix mayo, crema, Cotjia cheese, chili powder and minced garlic.
  3. Remove corn from water with tongs and spread about 1 tablespoon of mayo mixture all over the kernels.
  4. Generously sprinkle additional Cotija cheese over the corn and dust with more chili powder, as needed. Repeat with remaining corn.
