Quick & easy:Tofu Roast with Mashed Cauliflower

Serves 4

Ingredients

  • 1 lb Organic firm tofu, drained and patted dry
  • 1 1/2 tbsp Sweet chile ancho seasoning
  • 1 tbsp Olive oil
  • 12 oz Mashed cauliflower, heated according to package directions

Instructions

  1. Preheat oven to 375ºF. Line a baking sheet with foil.
  2. Rub tofu block with oil. Cover it entirely with ancho seasoning then place on prepared baking sheet.
  3. Roast for 20 minutes then remove and let rest for 5 minutes. Slice and serve with mashed cauliflower.
