Quick & easy:Tofu Roast with Mashed Cauliflower

Serves 4
Ingredients
- 1 lb Organic firm tofu, drained and patted dry
- 1 1/2 tbsp Sweet chile ancho seasoning
- 1 tbsp Olive oil
- 12 oz Mashed cauliflower, heated according to package directions
Instructions
- Preheat oven to 375ºF. Line a baking sheet with foil.
- Rub tofu block with oil. Cover it entirely with ancho seasoning then place on prepared baking sheet.
- Roast for 20 minutes then remove and let rest for 5 minutes. Slice and serve with mashed cauliflower.
