Unsaved Tofu Power Bowl

Ingredients

  • 1/2 cup Mediterranean pearl couscous
  • 1 cup Cherry tomatoes, sliced into coins
  • 1 cup English cucumber, peeled, cut into pea size
  • 8 oz Firm tofu, cut into pea size pieces
  • 1/4 cup Tzatziki

Instructions

  1. Microwave pearl couscous for 4 minutes.
  2. Heat a large non-stick skillet on high heat, add tofu, and sear hard for 4 minutes.
  3. Combine all ingredients in a bowl, toss well to combine, and serve.
