Tofu Masala Skewers

Ingredients
- 5 oz Non-fat plain Greek yogurt
- 1 tbsp Tandoori seasoning
- 2 oz Masala marinade and grilling sauce
- 10 oz Extra firm tofu, drained, pressed, cut into 1-inch cubes
- 1 Medium red onion, cut into 1-inch pieces
- 2 Medium bell peppers, seeds removed, cut into 1-inch squares
Instructions
- Combine yogurt, tandoori seasoning, and masala marinade in a medium bowl, and whisk to combine. Add tofu cubes and toss to coat. Cover and refrigerate overnight or at least 4 hours to allow tofu to marinate.
- Once tofu has marinated, preheat a gas grill to high heat.
- While grill heats, thread a skewer with onion followed by bell pepper, and tofu. Repeat until skewer is full then place on a plate. Use remaining veggies and tofu to fill more skewers.
- Brush skewers with any remaining marinade from the bowl. Spray each skewer with non-stick spray and place on preheated grill. Grill over high heat for 15 minutes, turning occasionally.
