Tofu Egg White Scramble

Ingredients
- 8 oz Hard tofu, cut into 3/4 inch pieces
- 2 cups Baby spinach/kale
- 1/2 cup Champagne sweet tomatoes, cut in half
- 2 cups Egg whites
- 1 tbsp Salt
- 1 cup Mexican shredded cheese
Instructions
- Place a large non-stick skillet over medium-high heat.
- Add 1 tablespoon of grapeseed oil to hot skillet.
- Place tofu in skillet and cook for 3 minutes, tossing every minute.
- Add baby spinach/kale and tomatoes, and cook for another minute.
- Add egg whites and cook until done, about 5 to 7 minutes.
- Top with salt and cheese. Serve hot.
