Tofu Egg White Scramble

Serves 4

Ingredients

  • 8 oz Hard tofu, cut into 3/4 inch pieces
  • 2 cups Baby spinach/kale
  • 1/2 cup Champagne sweet tomatoes, cut in half
  • 2 cups Egg whites
  • 1 tbsp Salt
  • 1 cup Mexican shredded cheese

Instructions

  1. Place a large non-stick skillet over medium-high heat.
  2. Add 1 tablespoon of grapeseed oil to hot skillet.
  3. Place tofu in skillet and cook for 3 minutes, tossing every minute.
  4. Add baby spinach/kale and tomatoes, and cook for another minute.
  5. Add egg whites and cook until done, about 5 to 7 minutes.
  6. Top with salt and cheese. Serve hot.
