Tofu Burger

Ingredients

  • 1 Extra firm tofu
  • 2 Garlic clove, minced
  • 1/2 cup Sweet onion, chopped
  • 1/2 cup Carrot, grated
  • 1/2 cup Red bell pepper, diced
  • 3 tbsp Low sodium soy sauce
  • 2 tbsp Dijon mustard
  • 1/4 cup Crushed walnuts
  • 1 tsp Sriracha Sauce
  • 2 tbsp Fresh basil
  • 2 tbsp Fresh cilantro, chopped
  • 2 tbsp Vegetable oil

Instructions

  1. Remove tofu from package and discard water. Wrap tofu in a CLEAN dish towel or paper towel. Place tofu between 2 plates then place a heavy pot, dish or can on top. Let tofu sit while you prepare other ingredients. This will squeeze out excess moisture from tofu for a better burger.
  2. Heat vegetable oil in a medium sauté pan. Add in garlic, onion, carrot, and red bell pepper. Sauté until onions and vegetables are tender. Remove from heat and set aside.
  3. Remove tofu from paper towel and discard remaining liquid.
  4. In a large bowl combine all ingredients. Make sure tofu has crumbled evenly. Use a ½ cup measure cup to measure 4 to 5 patties.
  5. Preheat oven to 400°F.
  6. Place patties on a foil lined baking sheet. Roast patties for 15 to 20 minutes or until firm.
  7. Serve patties on whole wheat buns. Ideal toppings include pineapple rings, Asian slaw or traditional lettuce and tomatoes.
  8. Patties can be cooled and frozen individually. To reheat place in a 350°F oven until warmed through.
