Toasted Cauliflower with Pine Nuts, Cranberries and Pecorino

Ingredients

  • 1 Large cauliflower, bottom leaves trimmed but cauliflower left whole
  • 2 tbsp Extra virgin olive oil, plus more as needed
  • 1/2 cup Dried Whole Cranberries
  • 1/3 cup Pine nuts, lightly toasted in dry pan
  • 1/3 cup Grated Pecorino Romano

Instructions

  1. Fill a large pot with water and set over high-heat, salt water generously and allow to come to a boil.
  2. Preheat oven broiler to high and position top rack to be 6 to 8 inches below broiler burner.
  3. Place trimmed cauliflower into boiling water and submerge. Allow to cook for 5 to 7 minutes.
  4. Drain water and remove cauliflower to a sheet pan lined with foil. Drizzle olive oil over top of cauliflower and season with salt and pepper.
  5. Place cauliflower under broiler and allow to cook for 5 to 7 minutes or until cauliflower top is nicely browned. Remove and allow to rest.
  6. In the meanwhile, combine cranberries, pine nuts and pecorino together into a bowl, toss to coat. Set aside.
  7. Once cauliflower has cooled slightly, cut into wedges and sprinkle a little pine nut mixture over each slice as needed.
