Tiramisù

Ingredients
- 5 Eggs, yolks only
- 1 1/2 cups Granulated sugar
- 3 1/2 cups Mascarpone
- 1 cup Heavy whipping cream, divided use
- 30 Ladyfinger Cookies
- 3 cups Strong brewed coffee, cooled to room temp
- 1/2 cup Unsweetened cocoa powder
Instructions
- In a bowl, whisk the egg yolks with the sugar until foamy and slightly set.
- Place mascarpone in a bowl and whisk in about 1/4 cup of heavy cream.
- Fold mascarpone mixture into the egg yolks.
- To assemble Tiramisù, quickly dip ladyfinger cookies in the coffee and arrange them in a dish with tall sides so they're touching each other.
- Evenly spread half of mascarpone mixture over ladyfinger cookies. Repeat layering with remaining ingredients.
- Refrigerate until set, about 1 hour.
- Before serving, sprinkle cocoa powder over the top.
