That Green Chicken Chili

Ingredients

  • 3 Applewood smoked thick cut bacon, finely diced
  • 1 cup Sweet onions, finely chopped
  • 2 lb Ground chicken breast 97% lean
  • 1/2 cup Matchstick carrots
  • 3/4 cup Reduced sodium chicken broth
  • 3/4 cup Heavy whipping cream, * see chef's note below
  • 1/4 cup Fresh cilantro, chopped
  • 1 cup Baby spinach, roughly chopped
  • 11 fl oz Jar H-E-B® That Green Sauce®
  • 16 oz Great northern beans
  • 1 tbsp Garlic cloves, minced or finely chopped
  • 1 tsp Ground cumin

Instructions

  1. Heat a large skillet to a medium-high heat, then add bacon and fry until fully cooked and slightly crisp.
  2. Add onion and ground chicken, and sauté until nicely browned and cooked through, about 8-10 minutes.
  3. Add carrots, chicken broth, heavy cream, cilantro, spinach, That Green Sauce, beans, garlic and cumin, and simmer 15-20 minutes.
  4. Chef's note: Can substitute canned, non-fat evaporated milk for heavy cream to reduce fat content.
