Unsaved Thai Spring Salad

Ingredients

  • 5 oz Red Leaf Lettuce, cut into bite-size pieces
  • 1 cup Angel sweet tomatoes, halved
  • 2 cups Hot house cucumbers, thin sliced
  • 4 Red onions, rings separated
  • 1 tbsp Fresh ginger root, fine chopped
  • 4 Red radishes, thin sliced
  • 1/4 cup Fresh Mint
  • 1/4 cup Fresh basil
  • 1/4 cup Fresh cilantro, only leaves
  • 2 tbsp Extra virgin olive oil
  • 1/4 cup Lime, juiced
  • 1/4 tsp Crushed red pepper flakes
  • 1 tbsp Dijon mustard
  • 1/4 cup Unsalted dry roasted peanuts, chopped

Instructions

  1. Layer lettuce, tomatoes, cucumbers, onion, ginger, radish, mint, basil and cilantro in a large salad bowl or platter. Cover salad and keep refrigerated until ready to serve.
  2. Combine olive oil, lime juice, crushed red pepper, mustard and 1/2 cup water in a small jar or salad cruet and shake.Keep at room temperature until ready to serve.
  3. Before serving, add vinaigrette to salad and toss. Sprinkle with peanuts if desired.
