Thai Red Curry Tofu and Eggplant

Serves 6

Ingredients

  • 1/2 cup Grapeseed oil, plus 2 Tbsp., divided use
  • 14 oz Firm tofu, cut into 1 " cubes
  • 3 tbsp Thai red curry paste
  • 3 cups Coconut cream
  • 1 Yellow onion, sliced julienne
  • 2 Baby eggplants, cut into 1 " cubes
  • 8 oz French green beans
  • 0.7 oz Basil, leaves, torn

Instructions

  1. Place 1/2 cup of grapeseed oil in a medium teflon pan or wok. Add tofu and fry until lightly browned. Transfer tofu to paper towels to drain. Discard oil when cool then wipe out the pan.
  2. Using the same pan, add 2 tbsp. of grapeseed oil and heat until shimmering. Add curry paste and fry, stirring constantly, until fragrant (about 2 minutes).
  3. Stir in the coconut cream and cook until the mixture breaks (the fat begins to separate out of the sauce).
  4. Add onions, eggplant, and green beans and simmer covered for 15 minutes. Remove lid, add fried tofu, and simmer for another 5 minutes. Stir in basil and serve with brown rice or Jasmine rice.
