Thai Red Curry Tofu and Eggplant

Serves 6
Ingredients
- 1/2 cup Grapeseed oil, plus 2 Tbsp., divided use
- 14 oz Firm tofu, cut into 1 " cubes
- 3 tbsp Thai red curry paste
- 3 cups Coconut cream
- 1 Yellow onion, sliced julienne
- 2 Baby eggplants, cut into 1 " cubes
- 8 oz French green beans
- 0.7 oz Basil, leaves, torn
Instructions
- Place 1/2 cup of grapeseed oil in a medium teflon pan or wok. Add tofu and fry until lightly browned. Transfer tofu to paper towels to drain. Discard oil when cool then wipe out the pan.
- Using the same pan, add 2 tbsp. of grapeseed oil and heat until shimmering. Add curry paste and fry, stirring constantly, until fragrant (about 2 minutes).
- Stir in the coconut cream and cook until the mixture breaks (the fat begins to separate out of the sauce).
- Add onions, eggplant, and green beans and simmer covered for 15 minutes. Remove lid, add fried tofu, and simmer for another 5 minutes. Stir in basil and serve with brown rice or Jasmine rice.
