Texas Tater Tot Casserole

Ingredients
- 1 1/2 lb Ground beef
- 10.5 oz Cream of poblano condensed soup
- 15 oz Fried potatoes, (half 30 oz. package) frozen
- 1 cup Shredded Mexican style blend cheese
- 1 1/2 cups Bloody mary mix, (or flavor of your choice)
- 1 1/2 tbsp Prime coarse seasoning
- 15.5 oz Black eyed peas, drained
- 11 oz Southwestern corn, drained
Instructions
- Heat oven to 425ºF.
- Heat an oven-proof skillet over medium high. Add ground beef. Brown well.
- Add seasoning and Bloody Mary mix, stir well and allow to simmer 4 to 5 minutes to concentrate flavors.
- Add corn, black eyed peas and soup. Stir to mix and bring to a simmer again.
- Remove from heat. Top with cheese and a single layer of tater tots.
- Place in oven and cook until tater tots are brown and crispy, about 15 to 18 minutes.
