Texas Tater Tot Casserole

Ingredients

  • 1 1/2 lb Ground beef
  • 10.5 oz Cream of poblano condensed soup
  • 15 oz Fried potatoes, (half 30 oz. package) frozen
  • 1 cup Shredded Mexican style blend cheese
  • 1 1/2 cups Bloody mary mix, (or flavor of your choice)
  • 1 1/2 tbsp Prime coarse seasoning
  • 15.5 oz Black eyed peas, drained
  • 11 oz Southwestern corn, drained

Instructions

  1. Heat oven to 425ºF.
  2. Heat an oven-proof skillet over medium high. Add ground beef. Brown well.
  3. Add seasoning and Bloody Mary mix, stir well and allow to simmer 4 to 5 minutes to concentrate flavors.
  4. Add corn, black eyed peas and soup. Stir to mix and bring to a simmer again.
  5. Remove from heat. Top with cheese and a single layer of tater tots.
  6. Place in oven and cook until tater tots are brown and crispy, about 15 to 18 minutes.
