Texas Style Oven Smoked Brisket

Ingredients
- 1/4 cup Liquid smoke
- 6 tbsp Texas Brisket Rub
- 4 tbsp Adams Reserve Smoked Mustard Rub
- 4 lb Packer style beef brisket
Instructions
- Preheat oven to 250ºF. Add 3 cups water and liquid smoke to the bottom of a large roasting pan with a rack.
- Combine Texas brisket rub and smoked mustard rub in a small bowl. Rub mixture over entire surface of brisket, including the sides.
- Lay brisket on rack and cover pan tightly with foil. Insert an oven safe thermometer through the foil into thickest part of brisket. Be careful not to rip the foil.
- Slow roast in oven until internal temperature reaches 155ºF. Remove foil and continue roasting until internal temperature reaches 165ºF.
- Remove from oven and rest for 20 minutes, covered loosely with foil to maintain heat.
- Cut into thin slices with the grain of the meat, and serve with your favorite sides.
