Texas Style Cucumber Salad

Unsaved Texas Style Cucumber Salad

Ingredients

  • 4 H‑E‑B Simply Wrapped Brisket Jalapeño Poppers, approximately 4 poppers, or as needed
  • 1 Large seedless or English cucumber, washed, ends trimmed and thinly sliced. Skin left on
  • 1/3 cup Greek yogurt
  • 1/4 cup Green onions, diced or sliced
  • 1/4 cup Red onion, thinly sliced
  • 1 tbsp Serrano peppers, minced fine, plus more as needed for spice
  • 1/2 cup Sharp cheddar cheese, shredded, plus more as needed
  • 1/4 cup Fresh cilantro, chopped fine
  • 2 tbsp Mi Tienda enchilado snack mix, crushed or chopped fine
  • 1 tbsp Red wine vinegar

Instructions

  1. Preheat oven to 425ºF.
  2. Place 4 poppers on a small sheet pan lined with foil. Bake for 35 to 40 minutes or until bacon is crispy and poppers are fully cooked.
  3. Allow poppers to cool before dicing into small pieces.
  4. In a quart container or bowl, combine cucumbers, poppers, yogurt, green onions, red onions, serrano pepper, cheese, cilantro, nuts, red wine vinegar and a generous pinch of salt and pepper.
  5. If using quart container place lid on tight and shake until salad is mixed. If using a bowl, mix well to combine and coat all ingredients.
  6. Season to taste as needed. Serve immediately.
