Texas-Style Chili

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 13 oz Reduced sodium beef broth
  • 1 cup Tomato juice
  • 1 Bay leaves
  • 1 Yellow onions, diced
  • 1/2 tsp Kosher salt
  • 15 oz Mexican style tomatoes
  • 1 tsp Chili powder
  • 1 Green peppers, diced
  • 1 lb Lean ground beef
  • 1/4 tsp Ground black pepper
  • 1 tsp Ground cumin
  • 15 oz Red kidney beans, no salt added
  • 1 tsp Sriracha chili sauce, optional

Instructions

  1. Heat a large pot over High heat 2 minutes. Add oil and ground beef, and saute 5 minutes until liquid is gone and meat is browned.
  2. Add onion, bell pepper, salt, black pepper, chili powder, bay leaf and cumin. Saute 3 more minutes.
  3. Add beans, tomatoes, broth, and tomato juice. Bring to a boil, reduce heat to a simmer and cook 15 minutes. Add chili garlic sauce for a spicy version, if desired. For a richer flavor and thicker texture, simmer 1 hour.
