Texas-Style Beef Fajitas

Ingredients

  • 2 lb Beef skirt steak
  • 1 cup Cookwell & Co. Pecos 83 BBQ Marinade
  • 3 tbsp Adams Reserve Lopez Rub
  • 2 Lime(s), halved
  • 16 Flour tortillas
  • 1/2 cup Medium pico de gallo
  • 1/2 cup Guacamole
  • 1/2 cup Shredded Monterey jack cheese

Instructions

  1. Lay beef on a baking sheet or clean surface.
  2. Drizzle Pecos 83 Marinade over beef. Let stand 15-20 minutes.
  3. Shake beef to remove excess marinade and season with Adams Reserve Rub of your choice.
  4. Grill beef according to time and temperature directions on package; cook till beef looks done.
  5. Remove from grill and squeeze fresh limes over beef; set aside for 5 minutes.
  6. Slice beef thinly, across the grain.
  7. Serve in hot flour tortillas with pico de gallo, guacamole and shredded cheese.
