Unsaved Texas Pico de Gallo Slaw

Ingredients

  • 4 cups Green cabbage, thin sliced
  • 3 Medium carrots, grated
  • 1/4 cup Green onion(s), chopped
  • 1 1/2 cups Mild Pico de Gallo
  • 1/4 cup Extra virgin olive oil
  • 1 tsp Kosher Salt
  • 1/2 cup Limes, juiced
  • 1 tsp Ground black pepper
  • 2 cups Corn chips, regular

Instructions

  1. In large bowl, combine cabbage, carrots, green onions and pico de gallo.
  2. Combine olive oil and lime juice in small bowl; stir well.
  3. Pour dressing over cabbage mixture and toss to coat. Season with salt and pepper.
  4. Cover salad with plastic wrap and chill for 15 minutes or more.
  5. Top salad with corn chips and toss before serving.
