Tempeh Tacos

Ingredients

  • 1 tbsp Ottavio Private Reserve Extra Virgin Olive Oil
  • 8 oz Tempeh, crumbled
  • 1 cup White onion(s), diced
  • 1.2 oz H-E-B Select Ingredients 25% Less Sodium Taco Seasoning Mix
  • 14 1/2 fl oz H-E-B Diced Fire Roasted Tomatoes
  • 8 Hard taco shells
  • 1 cup Salad tomato(es), chopped
  • 1 cup Iceberg lettuce, shredded
  • 1 Large avocado, seeded and sliced

Instructions

  1. Heat oil in a large non stick pan over medium high flame. Add in crumbled tempeh and diced onion. Cook for several minutes until onion is tender and tempeh begins to brown.
  2. Add in taco seasoning and fire roasted diced tomatoes with the liquid. Stir to combine then bring to a simmer.
  3. Allow the tempeh to simmer for 4 to 5 minutes then remove from heat.
  4. Serve in a hard taco shell with tomato, lettuce and avocado.
