Tangy Tofu Torta

Serves 4
Ingredients
- 14 oz Extra firm tofu, cut into eight 1/2 pieces
- 1/3 cup Salsa verde
- 1 Peeled garlic cloves, minced
- 10 oz No salt added black beans
- 4 Slider buns
- 1 cup Iceberg lettuce, shredded
- 1/4 cup Pickled jalapenos
- 1 cup Queso fresco, crumbled
Instructions
- Slice tofu and place between 2 sheets of paper towels. Gently press tofu until paper towels are soaked through. Discard paper towels.
- Place half of salsa verde in the bottom of a baking dish. Lay tofu in a single layer on top of salsa. Cover with garlic and remaining salsa verde.
- Marinate 1 to 24 hours in the refrigerator.
- Spray grill with non-stick spray. Preheat grill to Medium.
- Drain salsa verde from tofu and pat dry with paper towels. Grill 2 to 3 minutes per side or until nicely browned.
- While tofu is grilling, heat black beans in a microwave safe bowl 2 to 3 minutes or until heated through.
- Assemble each sandwich by layering tofu, beans, lettuce, jalapeños and queso fresco.
