Tangy Cod Ceviche

Ingredients

  • 12 oz Cod fillets
  • 1/2 tsp Beef Fajita Spice Blend
  • 1/2 cup Red onions, chopped
  • 1 cup Celery stalks, chopped
  • 2 cups Tomato, chopped
  • 1 Jalapeño pepper, thin sliced
  • 1 Lime, juiced
  • 4 tbsp Fresh cilantro, chopped
  • 1 tbsp Extra virgin olive oil
  • 2 cups Spring mix

Instructions

  1. Remove cod fillets from the package and cut into 1/2 inch pieces and place in a microwave safe dish.
  2. Season the cod with a 1/2 teaspoon of the fajita seasoning. Reserve the remaining fajita seasoning for the Ceviche.
  3. Cover the dish with plastic wrap and microwave on High power for 3 minutes or until flaky; drain & cool for 15 minutes.
  4. Combine the drained cod fish, chopped onion, chopped celery, chopped tomato, sliced jalapeño pepper, 1 lime juiced, cilantro, remaining fajita seasoning, and olive oil in a large bowl and toss to combine.
  5. For each salad, serve 1 1/2 cups Ceviche over 1 cup of Spring Mix greens.
